Escalopes with lemon: what a revelation.


We all know that lemon is a magical ingredient, its versatility can give any dish an extra touch. Today it’s going to be the leading actor of a simple and very tasty recipe, which perhaps not everyone is familiar with: lemon escalopes. Here's how to prepare them in few simple steps.

Ingredients for 4 people:

8 slices of veal
20 gr of flour
50 gr of butter
1 lemon
Salt and Pepper to taste
Oil to taste

Begin by thinning your veal slices with the help of a meat mallet and flouring them on both sides.
Then take a non-stick pan, melt a knob of butter in two tablespoons of oil and lay the slices in it. Brown them on both sides over high heat, add salt and pepper. Continue to cook for a few minutes, then remove the meat from the pan, placing it on a plate.
At this point, squeeze a lemon and add its juice to remaining one in the pan.
Then put the escalopes back into the pan and let them season over high heat in the sauce for a few minutes.
To serve them, add some grated lemon zest and enjoy the flavor of Sicilian lemons in this simple and delicious dish.
