Limoncè and raisin cookies
Ingredients for 30 biscuits:
320 g of flour 00
100 g of sugar
50 g of raisins
20 ml of Limoncè
100 g of butter at room temperature
3 g of baking powder for cakes
A bit of Icing sugar
First we put the raisins in water for about 15 minutes, so as to rehydrate it. Then we make the lemon rind and we squeeze the juice, after which we keep both ingredients aside.
Sift in a bowl the flour and yeast, then add the butter cut into cubes and sugar and begin to knead everything with your hands.
When we have obtained a homogeneous mixture we add the egg, limoncello, lemon juice and zest.
Using a spoon, mix all the ingredients well and add the drained raisins. We knead everything with our hands until you get a uniform consistency.
Then cover the mixture with a film and let it rest in the refrigerator for 30 minutes. After half an hour we make about thirty balls with the dough, let’s dip them in icing sugar and arrange them on a drip tray lined with baking paper, spaced between them.
We bake our biscuits in a preheated static oven at 180° for 20 minutes. Once the biscuits are ready, churn them, add more icing sugar and let them cool completely.
Now we just have to taste our cookies with raisins and Limoncè or give them to the people we love the most!
