Ricotta and Limoncé squares


Ingredients for 12 portions:
500 gr of fresh ricotta
100 gr of sugar
100 ml of fresh cream
70 gr of potato starch
3 eggs
2 small glasses of Limoncè
½ gr of vanilla powder bag
a pinch of sugar powder and cinnamon powder.

First we break the eggs in a bowl, add the small glasses of Limoncé, the vanilla powder and whisk everything with an electric beater. As we continue to whisk we add the sugar, fresh cream and potato starch to the mixture a little at a time. Finally, we add ricotta and we continue whisking to blend all the ingredients together. When the mixture is blended well and it doesn’t have clumps, we take an alluminium baking pan and cover it with baking paper. We pour the mixture into the pan, leveling it well with a spatula. Now we are ready to put it in the oven, set on static at 175 °C, or in a fan oven at 165 °C for 40-45 minutes. We will know that the cake is ready if at the end of baking it is nice and golden on the surface. Once it is ready, we can cut it first into strips and then into squares to make 12. Let's garnish them with sugar powder and, if we like it, a little cinnamon. Only one thing is missing now: taste them! Enjoy!
