Spaghetti with lemon, bottarga and Limoncè


Ingredients for 4 people:
320 g of spaghetti
30 g of bottarga
Zest of 1 untreated lemon
1 clove of garlic
Parsley to taste
8 tablespoons of extra virgin olive oil
Salt to taste
2 tablespoons of Limoncè

Put the water for the pasta on the fire and add salt, as soon as it boils, throw the spaghetti.
While cooking the pasta, prepare the sauce: pour the oil into a pan, add the lemon zest and garlic and let it sauté for a few minutes over low heat.
Once cooked, drain the pasta, raise the heat under the saucepan and add the freshly drained spaghetti. We combine the chopped parsley leaves and the two spoons of Limoncè.
We mix everything and sauté intensively to obtain a creamy emulsion. We add the bottarga last and lunch is ready.
Now all we have to do is plate our spaghetti and enjoy them with those we love. Bon appétit!
